"During my formative years as a student at the RCA I had a very short intense period of time working with my mentor Mick Casson. He not only taught me the principles of salt firing but introduced me to the 10.30 am coffee break. Talking with his son, Ben, who still continues this tradition he said it was constructed to create a rhythm to the day giving a focal point away from manual work and allowing a time for reflection and contemplation.
The coffee pour over filter cup equates to the ceremonial qualities associated with a tea pot and a tea strainer. The activity demands attention and focus. It is very different from being served tea or coffee. I think the solitary activity of preparing and making a drink for yourself is a more meaningful experience. The unpredictability of so many variables like the quantity of coffee, the temperature of the water contribute to a unique coffee every day rather than trying to replicate something you had yesterday. It is about enjoying the moment when it arrives."
